The walnuts which we sell are grown in a nursery. Farmers gather walnuts seeds and allow them to dry on a flat surface for about two weeks. Once the time passes the husks become soft and can be easily removed. The seeds are sorted based on size and only the perfect size walnut seeds are then seeded in the field. Black walnuts are then grafted to produce the classic English walnuts in shell.
California walnuts are harvested from late August to November from more than 200,000 acres of orchards throughout the California Central Valley. Mechanical shakers are used at harvest to vigorously shake each tree and walnuts fall to the ground. The walnuts are carefully swept into rows to allow mechanical harvesters to pick them up for cleaning. Walnuts are processed as in-shell and shelled nuts. For the crunchy roasted taste the walnuts are placed into the over at 225 degrees which allows the oils to be released which gives them all that flavor as roasted salted walnuts.
